Because they are EVERYTHING and they have EVERYTHING!!! And they ARE everything! These cookies are just a wonderful mix of flavors, and I can’t get enough of them. They are simple to make and they look so pretty — see:
Ingredients:
1 cup softened butter (2 sticks)
½ cup sugar
½ cup firmly packed dark brown sugar
2 large eggs
1 teaspoon vanilla imitation extract (Why imitation? Read this!)
2 cups flour
1 tsp baking soda
½ tsp baking powder
Pinch of salt
2 cups of old fashioned oats
1 cup semi-sweet chocolate chips
1 cup white chocolate chips
1 cup shredded sweetened coconut (don’t skip this!)
1 cup roughly chopped pecans
1 cup Heath toffee bits
Directions:
Preheat oven to 350 degrees, line cookie pans with parchment paper.
Mix butter and sugar until light and fluffy. Add eggs one at a time. Then add vanilla and mix until incorporated.
In separate bowl mix: flour, baking powder, baking soda, and salt.
Add flour mixture to the butter mixture a little at a time until mixed thoroughly.
Add oatmeal and mix.
Using a stiff spoon stir in chocolate chips, coconut, pecans, and toffee bits. Then, using an ice cream scoop dump mounds onto cookie sheet – they don’t spread much, but give them a little space to grow. (You can make these smaller, but it makes them crunchier.)
Cook them for 16-18 minutes.
And then hide them…they are the best…everyone will want them…you don’t have to share…or do, you can always make more, they are so simple and easy.
