My dad loved peanut butter. It was his favorite ice cream, cookie, pie, and bar…my mother knew this, so we often had peanut butter things laying around specifically to make him happy. This recipe was one of my favorites. It must have been my dad’s too, because every time I went home there were a batch of these in mom’s round Tupperware container. It was the first place I went to after getting home — my adult memories are filled with chocolate and peanut butter while telling mom all about what was going on in my life.
I will admit, everything I’ve made so far felt like it wasn’t EXACTLY what my mom would have made, thus all the suggestions for changes. But this one…make it just like it is. You will thank me.
Peanut Butter Fingers
Cream together:
½ cup Margarine
½ cup Sugar
½ cup packed Brown Sugar
Blend in:
⅓ cup Peanut Butter
1 egg
¼ teaspoon Salt
½ teaspoon Baking Soda
½ teaspoon Vanilla
Add:
1 cup Flour
1 cup Quick Oats
Press this dough into a 9×13 baking dish. Bake at 350 degrees for 20 minutes — DO NOT OVERBAKE!
Remove from oven and immediately shake 1 cup of chocolate chips over the bars — wait 2-5 minutes and then spread evenly over bars.
½ cup Powdered Sugar
¼ cup Peanut Butter
2-4 Tablespoons Milk
Spread this mixture over the cooled bars.
