So, this dip will sound familiar to a lot of you — but I love the fact that my mom included this with her recipes and named it after my dad.
My dad LOVED his Kansas City Chiefs, although (in the words of HIS dad), “Those Chiefs can’t play no damn football.” — usually uttered as they were losing and grandpa had had enough. 🙂
So in honor of the KC Chiefs being in the SuperBowl today, we are making Don’s Dip, using the Winter Chili I posted yesterday (and yeah, sorry about the photos — my blog updated and poof everything disappeared).
Don’s Dip
- 1 cup Winter Chili (or 1 can of chili)
- 1 can of Rotel (you see where we are going, yes?)
- 1/2 a block of Velveeta cheese
Mix the Rotel and Velveeta in a pot — cook on medium heat until the cheese is just about melted. Take the cup of Winter Chili and put it in a food processor and pulse until nice and smooth-ish. Add it to the nearly melted cheese mixture and stir until well combined.
When the cheese melts completely: plop the dip into a serving bowl, surround it with chips and whatever else you feel inclined to dip into cheese (we sometimes use celery, green peppers, and pita).
