My friends came to visit, and while they were here they offered to make dinner since one of them is on the keto diet. Now, I may LOVE to cook, but if you come to my house and offer to cook I am going to get the heck out of the way! Seriously, I love my kitchen but you can love it too – no problem! And then she said she was going to make cabbage, and I all like: “Oh great…cooked cabbage.” *picks up phone to open GrubHub*
BUT OMG! OMG! OMG! I was so wrong!!!!!!
Guys, when I tell people that I am into this amazing cabbage skillet dish they always look at me like:
“Freak.”
Or
“Thanks but I’d rather eat a hat.”
But I am seriously into this amazing cabbage skillet dish! And it is so good, I can’t even!!!
It has a great creamy texture with a kick from chilies and another kick from breakfast sausage (or Italian – just whatever kind of sausage that makes you swoon).
I can’t tell you how much you should just try this! Just give it a chance – if you don’t like it you can leave me nasty comments or review it like I do with recipes and make me feel your pain. This is your big chance, make this and roast me!
Seriously, this is super simple and oh so tasty! Don’t get fancy, this is a country dish please treat it as such. It is NEVER going to look amazing no matter what you do, so just chop the cabbage, chunk the cream cheese, etc. And EAT IT! Please, EAT IT!!!!!!!!

Alison’s Cabbage Skillet
1 lb sausage (whatever you like, I can vouch for breakfast and Italian both)
1 onion chopped
1 head of cabbage
8oz of sliced mushrooms (I like fresh, but you can use canned – just drain them)
1 can of Rotel – drained (Rotel = tomatoes w/green chilies)
1 brick (8 oz) of cream cheese
Dash of pepper
Dash of fennel seeds
Brown sausage in a big pot (trust me) – DO NOT DRAIN. If you want to add fennel seeds, do it here. Once it is browned add onions, mushrooms, and cabbage, cook them until soft (like 5 minutes). Add the Rotel and cream cheese and pepper, cook until the cream cheese has melted and incorporated fully.
Then dip that stuff into a big old bowl and EAT IT UP!!!!
Tips:
*If it is too thick add a dash of whipping cream or milk to thin it out.
